You Will Need (Additional Ingredients):
For vegetarians: lettuce, cherry tomatoes, bell peppers, avocado, and onion.
For non-vegetarians: chicken or any protein of your choice.
PROCESS:
Prepare the black beans.
Soak the dry black beans in water for at least 4 to 12 hours or overnight.
Cook the soaked black beans in a pressure cooker until 4-5 whistles.
To make black bean filling:
For Vegetarian:
*In a skillet, toss your bell pepper, jalapenos, and cooked black beans with a drizzle of cooking oil and a sprinkle of taco seasoning mix along with taco sauce. Thoroughly mix the bean mixture, and keep aside.
For Non-Vegetarian:
*In a skillet, toss tiny protein pieces (chicken, etc.) and cooked black beans with a drizzle of cooking oil and a sprinkle of taco seasoning mix along with taco sauce. Thoroughly mix the bean mixture, and keep aside.
To make cherry tomato salsa
*Mix together cherry tomatoes, onion slices, and salsa sauce.
Assemble the Tacos.
*Warm the hard taco shells in the oven or microwave for a maximum of 5–15 seconds until they're crisp and ready.
*Spread lettuce leaf fill inside of it with black bean filling; put avocado slices on one side and then cheese sauce as well; add the cherry tomato salsa all over the open side of the tacos.
*Serve and Enjoy
Your DIY tacos are ready to enjoy! Customize them with additional toppings like More cheese and sour cream if desired.
