Instructions:

1. Prepare the mushrooms

Boil the Shitake mushrooms and oyester mushrooms into hot water for 5 mins. Strain and chop into small pieces.

2. Prepare the veggies

Heat sesame oil and saute ginger and garlic , onion bulbs, mushrooms, seasoning sauce, distilled vinegar, light soy sauce , paneer or any other non veg protein cubes, cook for 2 minutes and garnish with spring onion greens.

3. Make the dressing

In a small bowl mix together chilli oil , hot chili paste & spring onion greens.

4. Making the Tempura Filling

Empty Tempura batter in a bowl. Slowly add spring onion & cold water to make a
thick consistency batter.
Dip your carrot or vegetable/meat in tempura batter and deep fry until golden
brown. Set aside.

5. Making Rice Paper Sheet

Begin by pouring cold water in a shallow pan/tray/bowl. Take one rice paper and
immerse the rice paper sheets in cold water until pliable, usually about 5-10 seconds. If the rice paper sheet becomes too sticky, you can lightly oil your hands or the working surface. Repeat this for all sheets one by one.

6. Assembling

Lay the softened sheet on an oiled smooth surface, add tempura veggies, and tightly roll it away from you, folding in the sides to seal.
Repeat this for all sheets.

7. Serving

Arrange the prepared veggies on a serving plate, arrange the tempura rice paper
rolls, drizzle dressing over it and garnish with spring onion greens.
